advice | pre-game Meal crispy chicken strips


You can serve this along side rice or backed sweet potato fries (recipe coming soon). 


2 skinless, boneless chicken breasts, cut into strips

1 cup of breadcrumbs

1 tsp of dried oregano

2 large eggs, beaten

1/2 cup flour

Preheat oven to 375 degrees.

Cut chicken into strips.  If breasts are thick you could cut them in half. Mix breadcrumbs and dried herbs together and set aside on a plate. Whisk eggs together in a shallow bowl.  PLace flour on another plate. Coat chicken in flour, dip into egg, and press into breadcrumbs so chicken is completely covered.  Transfer to plate and repeat with remaining chicken strips.

Heat a nonstick frying pan with a good glug of olive oil or grapeseed oil. Cook chicken for a minute on each side just to firm up breadcrumbs.  Place in oven and continue cooking for 8-10 minutes, turning once. Serve with your favourite dip, like honey or plum sauce.

Makes 3-4 servings.
